For this week’s countdown to the new Fantastic Beast movie, I created Pumpkin Cheesecake Bites. The Pumpkin Cheesecake Bites represent the pumpkin beer that they drink in the movie.
Pumpkin Cheesecake Bites
What you need:
- Cupcake pan
- Cream Cheese
- Can of Pumpkin
- Pumpkin Spice Cheerios
- Butter
- Pumpkin Sprinkles
- Whipped Cream
- Brown Sugar
Step One
The first thing you want to do is prepare your crust. To enhance the flavor of the bites I used Pumpkin Spice Cheerios. To make the crust you want to crush up the cheerios. I used a rolling pin but you can use anything to crush them.
Once you have them all crushed up you want to melt one tablespoon of butter to add to the Cheerios. When you have the Cheerios and butter mixed together you will need to fill the cupcake liners with it.
Since the crust will still be hot make sure that you let them cool in the fridge while you make the cheesecake.
Step Two
While your crust is cooling in the fridge you will want to start to make the cheesecake.
For this step, you first want to blend out your cream cheese. I used a cup of cream cheese and half a cup of brown sugar to smooth it out.
Step Three
Once you have your cream cheese ready you will want to add in your pumpkin. Make sure to add a little at a time since the pumpkin is just to taste. I used a little less than half a can of pumpkin in mine.
Step Four
Once you have your mixture ready you can add them on top of your crust. After you have all of them filled you will want to chill them for a few hours.
After letting them chill, I topped my cheesecake bites with whipped cream and sprinkles.
